2 piece duck breast salt pepper 1 tbsp olive oil 1 lime
Take out the meat from the fridge, and pat the duck breast using a paper towel.
With a sharp knife, score the skin of the duck breast in a cross-hatch pattern.
Season it well on both sides with salt, pepper and lime, and let it stand for about 15minutes
In a large pan, pour one teaspoon of duck fat or olive oil.
