Duck breast with sticky Pineapple rice

You can also enjoy having a duck breast with a bowl of sticky pineapple rice.

Ingredients
  

  • Jasmine rice
  • Frozen peas
  • 1 Red onion diced
  • Coconut milk
  • Fresh pineapple
  • Finely chopped coriander
  • Salt

Instructions
 

  • In a saucepan, tip the rice with salt as per your taste.
  • Pour the coconut milk with water, Bring to simmer and cover the pan.
  • Turn the heat down and cook it for 10 minutes.
  • Check the rice – if all liquid is absorbed add small cubed pineapple and let it rest.
  • In a small pan, cook red onion until light golden.
  • Add frozen peas and chopped coriander to it, and cook it for 3-4 minutes.
  • Serve the duck breast in a plate along with pineapple rice, and spread onion and peas.
