Duck breast with sticky Pineapple rice

- Jasmine rice
- Frozen peas
- 1 Red onion diced
- Coconut milk
- Fresh pineapple
- Finely chopped coriander
- Salt
In a saucepan, tip the rice with salt as per your taste.
Pour the coconut milk with water, Bring to simmer and cover the pan.
Turn the heat down and cook it for 10 minutes.
Check the rice – if all liquid is absorbed add small cubed pineapple and let it rest.
In a small pan, cook red onion until light golden.
Add frozen peas and chopped coriander to it, and cook it for 3-4 minutes.
Serve the duck breast in a plate along with pineapple rice, and spread onion and peas.
