Ingredients
  

  • 2 piece duck breast
  • salt
  • pepper
  • 1 tbsp olive oil
  • 1 lime

Instructions
 

  • Take out the meat from the fridge, and pat the duck breast using a paper towel.
  • With a sharp knife, score the skin of the duck breast in a cross-hatch pattern.
  • Season it well on both sides with salt, pepper and lime, and let it stand for about 15minutes
  • In a large pan, pour one teaspoon of duck fat or olive oil.
  • Lay the duck breasts skin side down the pan.
  • Turn up the heat to medium-high. Do not preheat the pan.
  • You need to cook the skin side for about 10 minutes.
  • Turn the duck breast overusing thongs, and lightly salt the exposed part.
  • Cook the meat side for about 4-5 minutes.
  • Take the duck breast off the heat and let it cool on the cutting board with skin side up.
