- Preheat the oven to 400F. Toss the tortilla strips with a light drizzle of oil and spread on a baking sheet.
- Bake the tortilla strips for 8 to 10 minutes, checking often, until golden and crisp; set aside for topping the soup.
- Meanwhile, heat the olive oil in a large soup pot over medium heat, then add the onion and bell pepper and cook for 5 to 6 minutes until softened.
