Mini BBQ Chicken Sliders
★★★★½ (4.6)
Soft slider buns piled high with shredded barbecue chicken and melted cheese, baked together into one shareable, pull-apart tray. They are ready in under an hour and always the first tray to empty.
- One tray feeds a crowd with almost no individual assembly
- Great way to use up leftover or rotisserie chicken
- Sweet, buttery poppy seed topping makes these taste bakery-fresh
- Preheat your oven to 350F and grease a 9x13-inch baking dish.
- In a medium bowl, mix the shredded chicken with 3/4 cup barbecue sauce until every piece is coated.
- Using a long serrated knife, slice the entire tray of connected slider buns in half horizontally in one cut, keeping the top and bottom each in one piece.
- Place the bottom half of the buns cut side up in the prepared baking dish.
- Spread the barbecue chicken mixture evenly over the bottom buns.
- Sprinkle the shredded cheddar cheese evenly over the chicken, then scatter the sliced red onion on top.
- Place the top half of the buns over the filling to close the sliders.
- In a small bowl, whisk together the melted butter, honey, Dijon mustard, and garlic powder.
- Brush this mixture evenly over the tops of the buns, then sprinkle with poppy or sesame seeds if using.
- Cover the dish loosely with foil and bake for 15 minutes.
- Remove the foil and bake for another 10 to 15 minutes, until the tops are golden brown and the cheese is fully melted and bubbling at the edges when you peek underneath.
- Let the sliders cool in the pan for 5 minutes, then use a sharp knife to cut along the seams into 12 individual sliders and serve warm with extra barbecue sauce.
Slicing the entire connected tray of buns in one horizontal cut, rather than separating each roll first, keeps assembly fast and the sliders neatly stacked.
Covering the dish with foil for the first half of baking prevents the tops from browning too fast before the cheese fully melts.
