Baked Spinach Artichoke Dip

- Preheat your oven to 375F and set an oven rack in the middle position.
- Place the thawed spinach in a clean kitchen towel and squeeze hard over the sink until no more water drips out; this step is essential or the dip will be watery.
- In a large bowl, use a rubber spatula to mash the softened cream cheese until smooth and no lumps remain.
- Add the sour cream and mayonnaise to the cream cheese and stir until fully combined and creamy.
- Stir in the squeezed spinach, chopped artichoke hearts, minced garlic, onion powder, salt, and pepper until evenly mixed.
- Fold in 1/2 cup of the mozzarella and 1/4 cup of the Parmesan, stirring until no dry streaks of cheese remain.
- Spread the mixture evenly into a 9-inch oven-safe baking dish or cast iron skillet, smoothing the top with the back of a spoon.
- Sprinkle the remaining 1/2 cup mozzarella and 1/4 cup Parmesan evenly over the top.
- Bake uncovered for 22 to 25 minutes, until the edges are bubbling vigorously and the top cheese is melted and golden brown in spots.
- If the top is not browned enough after 25 minutes, switch the oven to broil for 1 to 2 minutes, watching constantly through the oven window so it does not burn.
- Remove from the oven using oven mitts and let the dip rest for 5 minutes before serving; it will be extremely hot right out of the oven.
- Sprinkle with red pepper flakes if using, then serve warm with sliced baguette, tortilla chips, or crackers for dipping.
Squeezing every bit of water out of the thawed spinach is the single most important step; skip it and the dip turns soupy instead of thick and creamy.
For extra flavor, stir in 1/4 cup crumbled cooked bacon or a squeeze of lemon juice right before baking.
