  1. In a large bowl, stir the warm water, yeast, and sugar together. Let sit 5-10 minutes until foamy.
  2. Whisk in the yogurt and oil, then add the flour and salt. Mix with a spoon until a shaggy dough forms.
  3. Knead on a lightly floured counter for 6-8 minutes, until smooth and only slightly tacky.
  4. Place the dough in an oiled bowl, cover, and let rise in a warm spot for 60 minutes, until roughly doubled.
  5. Punch down the dough and divide into 8 equal pieces. Roll each piece into a ball, cover, and rest 10 minutes.
  6. On a floured surface, roll or stretch each ball into an oval about 1/4 inch thick.
  7. Heat a heavy skillet or cast iron pan over medium-high heat until very hot (a drop of water should sizzle and evaporate immediately).
  8. Place one naan in the dry, hot skillet. Cook 60-90 seconds, until large bubbles puff up on the surface and the bottom has golden brown char spots.
  9. Flip and cook the second side for another 60-90 seconds, until it is also browned in spots and cooked through with no raw dough patches.
  10. Stack cooked naan under a clean kitchen towel to keep them warm and soft while you cook the rest.
  11. Stir the minced garlic into the melted butter, then brush the warm garlic butter over each naan.
  12. Sprinkle with chopped cilantro and serve warm.
Yogurt in the dough tenderizes the gluten and adds a slight tang, giving naan its characteristically soft, pliable texture compared to other flatbreads.
Keep cooked naan covered under a towel as you go; this traps steam and keeps every piece soft instead of drying out on the counter.
